Chocolate Cherry Flapjacks – in case of emergency

Flapjack With Chocolate And Cherries

I recently moved desks at work. It was part of a general reshuffle ahead of plans to re-carpet our floor. I opened my new file draw to put away part of my spawning under-desk shoe collection and I found it:

Emergency Supplies

“What’s this?”

“It’s a desk emergency kit.”

“For Desk Emergencies?”

“No. Like for survival. If we need to. In an emergency. We all have them.”

Water packs, batteries, a radio, medical supplies. Everything we’d need to stay alive for a couple of days trapped in our 3rd floor office once the coffee’s run out and the zombie apocalypse rages below on 5th Avenue.

I don’t know what’s more disconcerting; that I need a desk emergency kit, or that I didn’t have one before.

Flapjacks

When I was a Girl Guide – not much of a Girl Guide, honestly, flapjacks were considered very important to survival. You’d be a fool to walk across Wimbledon Common, or camp for a night in a designated Guide Camping Field by the A3 without them. I think because of this, I always considered them to be a utility food, rather than a pleasurable one. Now I know better.

170g butter
2tbsp golden syrup
170g demerara sugar (or brown sugar)
225g oats
handful of chocolate chips
handful of dried cherries

  • Preheat the oven to 350f
  • Melt the butter and syrup over a medium heat
  • Fold in everything
  • Spread into a greased baking tin and bake for 25 – 30 mins
  • Score with a knife while warm, then leave to cool and cut
