Ingredients1 large potato per person – and a few extra for seconds. I use tend to use Maris Piper or King Edwards Salt and pepper Vegetable oil – it has a higher smoking temperature than olive oil so it is less likely to smoke out your kitchen
- Pre heat the oven to 400
- Wash the potatoes and prick several times with a fork to let out steam while cooking
- Rub with about 1tsp of vegetable oil and sprinkle over a generous pinch of salt
- Place on the oven shelf with a baking sheet to catch the drips of oil for 2 – 2 ½ hours
This is how you would bake a sweet potato too – though they take less time – maybe an hour and a half.
