Grape Salad/Relish

This is somewhere between a relish and a salad. It’s sharp enough to perk up left over cold chicken but substantial enough to works as a full side / veg dish.

Ingredients (serves 4 as a relish, 2 as a side)

2 handfuls of green grapes
½ red onion
½ lemon
½ bag of spinach or arugula (rocket)
1 tbsp olive oil
Salt and pepper

  • Slice the grapes in half
  • Thinly slice the ½ red onion into half moons
  • Cover the onions and grapes with the lemon juice and olive oil, ½ tsp salt and ¼ tsp pepper. Leave to marinate for 15 minutes.
  • Toss with spinach or arugula
