Orange Salsa
Ingredients (serves 4 – 6 as a side dish)
2 oranges
1 lemon
2 scallions (spring onions)
1 handful of flat leaf parsley
1 handful of toasted flaked almonds (to toast them yourself put them in a dry frying pan and toss them about for around 2 minutes. Watch them. The second you take your eye off them to answer the phone or put on a cd, they will burn)
3 tbsp Olive oil
Salt and pepper
- Supreme the oranges LINK and squeeze the remaining juice into the bowl
- Add the zest from half the lemon
- Slice the scallions into thin coins and add them too
- Chop the parsley as finely as you have the patience for and add to the bowl
- Add the almonds
- Season with a pinch of salt and pepper
- Pour in the olive oil while mixing to bring everything together
Variations
- Add 2 tbsp of chopped black olives
- Or 2 tbsp of chopped green olives
- Add 1tbsp of rinsed salted capers, 1tbsp chopped black or green olives and I clove of grated or very finely minced garlic
- Use basil as well as parsley and use pine nuts instead of almonds
